You say:
"I want to help my Mum out by making my lunches for school. What are some easy things I can make? I like all foods except mushrooms and milk." M, 13
Sam says:
"Hi M. How about some cool stylish sandwiches? I like to use a mix of white and brown bread slices though if you’re really into your health the brown stuff’s better. Ham and cheese is classic. Try the Sam's Special!"
Sam’s Special
Ingredients – For 1
- 3 slices great white bread
- Mayo
- Good quality mozzarella cheese (sliced from ball)
- 2-3 slices Parma ham
- Tomato, sliced
- Balsamic vinegar
- Rocket
Method
- Toast bread. Remove crusts with a knife. Cool.
- Spread mayo on two slices.
- Lice one: mayo side up, lay Parma, mozzarella, tomatoes. Top with slice two with mayo side up.
- Lay rocket on top. Drizzle with little balsamic.
- Top with third slice.
Lisa says:
“Well you know what I am going to say, obviously brown bread is going to be better than white as you get the benefit of all that extra fibre, or why not try rye or pumpernickel bread for a change. Don’t forget the green stuff, whether it is rocket, watercress or baby spinach for all those extra energy giving B vitamins.
Why not add a sprinkle of seeds as well such as sunflower, pumpkin, sesame or pinenuts for extra crunch and omega 3 & 6 fats - great for skin, hair and nails"
